My sweet daughter does not exactly like beetroot by itself. So I thought I should surprise her with a beautiful salad, and maybe she’d eat the beetroot, too. And so she did! She loved the mix of corn, parsley, ham and egg with a centerpiece of beetroot with horseradish paste. Check this out, it’s all about being creative!

I have never obsessed over what we call “healthy food” in modern times. I have never obsessed about how healthy the food we eat is, as most of the food we eat in Romania is healthy! And it has been like that forever. The new fast food restaurants (opened in the last 10-15 years) are not a Romanian tradition, and they haven’t succeeded in making career with my family. We are still into fresh vegetables, mashed potatoes, chicken and fish dishes, oven and clay pot cooking, etc.

And as spring has arrived, here is a Romanian “Cooking with Vivi” traditional snack for this time of the year. I wish from the bottom of my heart to all my readers to live the happy and healthy life we live! God bless all of you!

Cheese and ham sandwich

A few weeks ago, Octavian suggested a nutritious power meal that gives more or less the entire amount of calories we need/day. Have you tried that yet?

I think many of you will agree with me when I say that skipping meals is a more regular habit than having meals in 2012! Still, I am trying to promote at least breakfast and dinner if not 3 meals a day. I highly recommend that you try to make this sandwich before you leave for work. Kids will definitely love it, and the kitchen won’t be a mess!

Potato stew

Every time I cook potato stew I think of summer :). My Granny used to cook it on hot summer days. I remember coming back from the beach and smell the stew from downstairs. The secret? Well, add some smoked sausages or rashers of pork ham and the stew will smell and taste like heaven.
