Cooking with Vivi is 9 months old! Our baby is growing stronger every day. I am celebrating my love and passion for cooking with a collection of food photographs that made me happy. I enjoyed cooking the meals and taking these photographs, I loved every bit of light in every picture below! This is the first post, I will keep publishing photos for a few days. My sweet daughter does not exactly like beetroot by itself. So I thought I should surprise her with a beautiful salad, and maybe she’d eat the beetroot, too. And so she did! She loved the mix of corn, parsley, ham and egg with a centerpiece of beetroot with horseradish paste. Check this out, it’s all about being creative!

Another festive salad added to the Festive food section on Cooking with Vivi. It makes me happy and proud to see how much my daughter enjoys the food I cook for her. She has this absolutely sweet and delightful reaction when she sees the platter waiting for her on the table: she is literally swept off her feet and she shouts for joy! I need no other motivation to prepare exciting dishes for her!

Among other traditional dishes, mashed eggplant is very popular in Romania. It is usually served with chopped onion and tomatoes. I made mashed eggplant and a separate tomato, cucumber, olive, onion and parsley salad. Here they are!

I am a strong advocate of food design. I think that there is no one on this planet who can resist a beautifully designed dish. I was showing a smart 17 year old lady some photos I took on March 8, 2012 in our office, when we celebrated Women’s Day (link here) and she told me: “you can feel the taste of the sweets in these photos”.

I agree. There are platters of food that just make your mouth water. There are cakes and pastry in window shops that just make you die to have one! Here is a beautiful salad I arranged for my daughter. She had it for breakfast, but it can be served at any time of the day.

Sausages on salad bed

I feel I need to remind you that this is not a chef’s blog, as much as I would have liked to pursue this career. I am not a professional cook, nor have I ever taken any cooking classes. What qualifies me as a person who is entitled to share her cooking experiences is my passion for food. Since I was only 6, I have helped my Granny cook. She was patient enough to wait for me to carry out the tasks that she was assigning and explain everything with the utmost patience.

My passion for cooking has been rewarded heavily over the years. My daughter, my friends, the children on the camp we organize in the Romanian mountains, foreign friends and clients, almost everyone I cooked for appreciated my culinary gift. The best compliment I get is when someone asks for seconds, and that is not seldom at all.

The other equally strong reason why I am qualified to give advice here, on my blog, is the fact that I am a working mother. And as I have stated so many times, my blog addresses working mothers with a sense of cooking, just like me. So I am not an expert in cooking, but I am in expert in enjoying cooking, making food that others enjoy and cooking the fastest and easiest recipes. My recipes are mainly tricks on how to cook for your family without spending exhausting hours in the kitchen. I cook healthy food and I enjoy making arrangements that make your mouth water ;). Festive Oriental salad with apple

I love Oriental salad, with or without apples, eggs, mayonnaise, etc. I love boiled vegetables mixed together and I especially like decorating the salads with parsley, egg, olives and red peppers.

I have never obsessed over what we call “healthy food” in modern times. I have never obsessed about how healthy the food we eat is, as most of the food we eat in Romania is healthy! And it has been like that forever. The new fast food restaurants (opened in the last 10-15 years) are not a Romanian tradition, and they haven’t succeeded in making career with my family. We are still into fresh vegetables, mashed potatoes, chicken and fish dishes, oven and clay pot cooking, etc.

And as spring has arrived, here is a Romanian “Cooking with Vivi” traditional snack for this time of the year. I wish from the bottom of my heart to all my readers to live the happy and healthy life we live! God bless all of you!
