Braised beef, mushrooms and olives

Beef is easy to cook if you know one trick: how to tenderize the meat using baking soda! So, here is a new beef recipe for all cooking enthusiasts :).

Ingredients: 1 kg sirloin stake or similar soft beef (cubed), 3-5 tbls baked soda, 50-100 g butter, 1 teaspoon salt, 1/3 teaspoon pepper, 1 teaspoon dried basil, 2 tbls flour, 5-7 cloves garlic, thinly sliced, 2-3 onions finely chopped, 150-200 g mushrooms, 2 tbls olives, 3 tbls tomato paste, juice of 1 lemon, 2 cups water

Yield: serves 5-7

Time: 1-1.5 hrs.

Preparation:

Preheat oven. Toss the beef with the baked soda in a medium bowl. Put aside for 15 min. The baking soda makes the meat tender. Wash thoroughly and then dry with paper towel.

Heat butter in non-stick pan. Stir fry diced onion and meat until meat changes color (max 10 min).

 Add salt, pepper, basil and flour. Cook 5-10 more min. Stir occasionally.

Add tomato paste and 2 cups water.

Add the mushrooms and garlic. Cover and cook 5 more min.

Add the olives and lemon juice. Transfer into a heat resistant baking pot and stir gently. Cover and bake in the oven until the beef is very tender (aprox. 30-45 min).

Serve with mashed potatoes or on a bed of rice. Decorate with fresh parsley. Life is about loving what you do for other people, so enjoy cooking for your family!
