Fresh parsley and cheese stuffed mushrooms

I often cook stuffed mushrooms. Here, here and here are my other versions of “Stuffed mushrooms”. Today’s recipe is really simple and fast.

Ingredients: 9 large mushrooms, 9 tbls chopped parsley, pepper, salt, 9 cubes hard (Cheddar) cheese, butter

Yield: serves 3 or 4

Time: 30-45 min, depending on size of mushrooms

Preparation:

Clean, remove stems and pat dry mushrooms. Place in baking pot lined with parchment, buttered or oiled. Season with salt and pepper. Cook in the oven for 35-40 min. Remove excess water from mushrooms. Place on serving plate. Fill with chopped parsley and place a cheese cube on top. Microwave 3 min. Remove and serve hot.
