Vegetable and sausage quick lunch

I am not a professional cook and never pretended or wanted to be one. I express myself in many ways (from my teaching style to the way I wear my clothes, from the way I capture life through my Nikon lens to the way I cook for my family) and I put a lot of love and passion in everything I do. Most of you are busy ladies who are looking for easy recipes and that je ne sais quoi that makes a lunch or dinner more enjoyable. Today I am sharing a simple recipe of vegetables and sausage that my daughter liked very much. Enjoy and try at home!

For the vegetable and cheese appetizer:

Ingredients: 2 large tomatoes, half a cucumber, olives, parsley, cheese spread

Preparation:

Scoop the cucumber, fill with cheese, decorate just like in the photo below:

For the stuffed potatoes:

Ingredients: large potatoes, cheese, sour cream, butter, parsley, salt, pepper

Preparation:

Boil potatoes until fork tender, cut and stuff with cheese, sour cream and butter, microwave 5 min. Serve with sausage.

My daughter is a real fan of this kind of simple food and I designed it following her taste. Thus, I can guarantee that my 12 year old karate champion will always enjoy it!
