Breaded turkey schnitzel cutlets with vegetable and potato garnish

I cooked chicken schnitzel before, and today I decided to prepare a slightly more complicated yet delicious turkey version of the schnitzel. Follow the instructions and you will show real love to you dear ones :).


For schnitzel: 1 large turkey breast sliced and flattened (approx. 12 large schnitzels), butter (approx 10 teaspoons), mustard for rubbing the cutlets (approx 3-4 teaspoons), 1/4 teaspoon salt (twice), 1/4 thyme, 1/4 teaspoon rosemary, 1/4 teaspoon basil, 1/4 teaspoon parsley, a pinch of pepper, 150-200 g breadcrumbs

For garnish: 2 large potatoes and 500 g of frozen vegetables, salt, pepper, herbs, 6 teaspoons butter, juice of 1/2 lemon

Yield: 4-5 servings.

Time: 1 – 1.5 hrs.


Set the potatoes and vegetables to boil. Remove when fork tender, drain and put on platters. Preheat the oven. Slice the turkey breast in cutlets, then flatten the pieces with a meat mallet.

Season with salt (1/4 teaspoon).

Mix the breadcrumbs, herbs, 1/4 teaspoon salt, pepper on a fairly large platter or plate.

Butter a heat resistant roasting pot with 2-3 teaspoons butter.

Rub every salted cutlet first with butter and then with mustard (I used spicy mustard). Pat with breadcrumb mix and arrange in roasting pot. Add 5 more teaspoons butter on top. Cook 30 min – 1 hour, depending on the number of cutlets. My oven is really slow, so it took me 2 hrs to cook the cutlets.

Season potatoes and vegetables with salt, pepper, herbs and butter. Microwave them for a few minutes. Add some pressed cheese on top of the potatoes (it melts nicely) and lemon juice.
