Baked turkey thigh and butter potatoes

by viviana on January 19, 2013 in Mains

Turkey is a very affordable meat and it cooks almost as fast as chicken. As I wanted the dinner to be ready as fast as possible, I cut the large turkey thigh in small strips (3-5 cm long). Here is the recipe.

Ingredients: 1 turkey thigh cut into strips, 4 garlic cloves chopped, 50 g butter, 2 tbls. cooking oil, basil, rosemary, parsley, water, salt, pepper, juice of 1/2 lemon

Yield: 3 servings.

Time: 1.5 hrs.

Preparation:

Preheat oven. Cut turkey thigh in 2 cm wide strips, clean, pat dry with paper towel, season with salt pepper, herbs and lemon juice. Add garlic, Bake approx. 1 hour in heat resistant pot.

Boil potatoes until fork tender. Set aside in large dish.

Cut potatoes in cubes season with salt, pepper and herbs, place butter on top.

Remove meat from oven. Microwave potatoes 5 min or until butter melts. Gently stir at the end.

Serve with sour cream and lots of love on top!
