Sour cream vegetable soup

A cream of vegetable soup is a beautiful dish, either for lunch or dinner. I’ve cooked a nice cream of vegetable soup before and today I am presenting a new simpler version of it. Please follow the really easy steps and enjoy!

I altered the old recipe just a little bit and here is it how it goes:

Ingredients: 2 carrots, 1 onion, 2 or 3 potatoes, salt, pepper, basil, 50 g butter, juice of 1 lemon, sour cream or yogurt for serving

Yield: 3 servings.

Time: 30 min. tops.


Clean all vegetables, boil until fork tender.

Remove vegetables from pot and allow to cool a few minutes. Mix 5 minutes on high speed in the electric mixer. Add either some of the water you used for boiling or some broth. Add pepper, salt, butter, herbs and lemon juice.

Mix well all the ingredients until creamy.

Serve with yogurt or sour cream. This is a simpler recipe, because I just boiled all the ingredients and did not saute the onion. I thought I should give it a try and the result was great just the same. Enjoy every meal with your loved ones and share your love every day!
