Baked bacon, garlic, cheese and tomato chicken wrap

This is a simple, easy, yet very tasty chicken breast recipe. For more chicken recipes go here.

Ingredients: 4 chicken breasts, 12 slices of bacon, 3 large garlic cloves coarsely chopped, salt, pepper, rosemary, 2 small tomatoes finely chopped (like for bruschette), 3 tbls cooking oil, 50 g herb butter, 100 g yellow cheese (Romanian pressed cheese), sour cream for serving

Yield: 3 servings.

Time: 1.5-2 hrs.

Preparation:

Preheat oven. Clean and pound/cut breasts lengthwise until flat. Fill each breast with 3 slices of bacon, 1 garlic clove chopped, season with salt, pepper and rosemary, fold and wrap in aluminum foil. Place all three rolls in aluminum foil lined casserole dish. Push tomato pieces in each opening and sprinkle the tomato leftovers. Pour cooking oil on top. Bake 1-1.5 hour at moderate heat.

Remove from oven. Mix butter with herbs until paste (in Romania we buy it from the supermarket). Add herb butter and yellow cheese. Bake another 10-15 min.

Remove when brown.

Serve with cream while hot directly from casserole. Enjoy this lovely dinner with your loved ones!
