Baked cinnamon, sugar and raisins pumpkin

I love pumpkin! Both my Grannies used to make pumpkin for me when I was a child, and I am making it exactly how I learned from them. Enjoy a sweet and really easy recipe!

Ingredients: 1/2 large pumpkin (no seeds), 1 cup sugar, 5 cups water, 1/2 cup raisins, rum/vanilla extract, 1 tbls cinnamon, whipped cream and walnuts for decoration

Yield: 10 servings.

Time: 2 hrs.

Preparation:

Wash and drain the pumpkin, line the baking pot with aluminum foil, add the rum extract, sugar and raisins and place in the center. (You can also start by baking the pumpkin cut side down for 30 min and then turn it over.)

Bake approx. 2 hrs or until pumpkin can be easily pierced with fork. Pour a cup of water in the baking pot every 1/4 hrs.

Remove from baking pot, cut in large slices.

Allow to cool a little, serve either hot or cold with cream on top.
