Potato stew (easy recipe)

I made potato stew in the past, and it was always very tasty. However, I was determined to try it again, and prepare it faster. So here is the simplified version of my potato stew, with less ingredients, less effort and more love!

Ingredients: 1.5 kg potatoes, 500 g tomato sauce, 2 onions, 500 g pickled cornichon cucumbers, 300-500 g smoked ham, 2 red peppers, 1 large yellow pepper, 800 g green peas, salt, pepper, dried basil, dried rosemary, 6 tbls olive oil.

This is a typical Romanian dish.

Yield: 9 servings.

Time: approx. 2 hours.

Start by cleaning and boiling the potatoes until semi-soft.

Meanwhile saute the onion, chopped, in olive oil (5 min).

Dice the cucumbers and ham.

Cut the peppers.

Add the cucumbers and ham to the pan, saute for 5 min. Stir occasionally.

Remove the potatoes from hot water.

Mix the potatoes with the ingredients in the pan and peppers. Add some herbs (not all), salt and pepper.

Cook for 10 minutes.

Add the tomato sauce.

Add the green peas. Cook for 30 min.

Add the basil and rosemary.

Cook in the oven for at least 1 hour, stir occasionally. Here is the beautiful result!
