Chicken breast with mushrooms in clay pot

I have been told many times that I am stubborn. My opinion (!) is that I am not so stubborn, but persistent :D. One example: since I discovered the wonders of clay pot cooking, I can’t get enough of preparing food in it! That’s persistence, isn’t it?

Ingredients: 2 large chicken breasts, 500 g fresh medium mushrooms, salt, pepper, basil, rosemary, Italian herbs

Yield: 4 servings.

Time: 1.5 – 2 hrs.

After soaking the clay pot in cold water for 15 min, line with parchment. Wash, dry, salt and pepper the chicken breast.

Wash and dry the mushrooms. Place in clay pot. Sprinkle herbs and spices. Cover with lid. Bake in the oven for 1 – 1.5 hrs.

Remove lid and cook for another 30 min. Look at this beauty!

The mushrooms become soft and juicy. I added a little sour cream when I served. Enjoy, darlings!
