Veal sour soup (2)

I am so glad to be able to post a new slightly changed recipe for “Veal sour soup”. Here is the first recipe. It was equally good, but a little bit more difficult to prepare, so try this one if you are in a hurry.

Ingredients: 500 g veal, 1 onion, 1 parsley root, 1 carrot, 1 bundle parsley/lovage, 1 l water, 500 ml bortsch, 1 egg, salt

Yield: 8 servings.

Time: 1.25 – 1.5 hrs

Unlike last time, I sped up the process by using the food processor to cut the vegetables.

Boil the meat until tender (30 min to 1 hour), collect foam repeatedly, remove meat from water. Boil bortsch in separate pot.

Use the water to boil the vegetables. Add salt. Cook for 30 min. Remove from heat and let cool down for 15 min. Add the beaten egg while stirring.
