Vegetable stew and sausages

This is just another quick and easy recipe.

Ingredients:  2 large carrots, 1 onion, 2 green bell peppers, 3 large garlic cloves, 2 smoked sausages cut into 5 cm long pieces, 1 bundle parsley, 2 small pickled cucumbers, 1/2 cup tomato sauce, 1/2 teaspoon basil, salt, pepper, cooking oil

Yield: 3 servings.

Time: 20 – 25 min.

In a skillet, cook first the chopped onion over medium heat, stirring occasionally, until browned (about 3 to 5 minutes).

Add the carrots and garlic (diced). Cook over lower heat, stirring occasionally, about 2 more minutes.

Add the pickled cucumbers and cook about 3 minutes.

Add the green pepper chopped and tomato sauce. Cook for 3 minutes.

Add the tomatoes (previously cut in cubes and blended in the food processor for at least 5 minutes) and cook 2 minutes while stirring.

Heat some cooking oil in non-stick skillet. Cut sausage pieces at both ends in cross shape so they open like buds when cooked. Cook 5 minutes max.

Add the basil, salt and pepper. Cook 5 more minutes.

When both sausages and stew are done, remove from heat. Place sausages on top of a nice layer of stew. Remove any sauce in excess. Decorate with parsley leaves. Enjoy an awesome dinner with your beloved ones!
