Chicken schnitzel with mashed potatoes

My daughter loves chicken! She helped me prepare today’s chicken schnitzel and we had a lot of fun!


for the schnitzels: 4 chicken cutlets (not pound), 1 egg, 2 tablespoons breadcrumbs, 4 tablespoons flour, 5 tablespoons milk, ground pepper, salt, 8 tablespoons cooking oil

for the mashed potatoes: 2 very large potatoes, salt, 1/2 cup milk, 30 g butter

parsley for decoration

Yield: 3 servings.

Time: 20 min.

First cut the potatoes in large slices. Boil them for 15 minutes.

Meanwhile slice the chicken cutlets and salt them.

These are the ingredients for schnitzel:

Mix the egg with the breadcrumbs and 1 tablespoon flour. Add salt and pepper.

Add 5 tablespoons milk. Mix until creamy.

Spread 4 tablespoons flour on chopping block and cover cutlets in flour on all sides. Pat to stick.

Dip each cutlet into egg mixture. Coat each cutlet completely.

Heat oil in a large non-stick skillet over med-high heat. Cook until golden brown (approx 3-5 min on each side).

Back to the mashed potatoes now. Mix the potatoes, 1/2 cup milk, butter and salt at high speed in your food processor for about 5 minutes.

Serve hot with parsley decoration.
