Baked turkey leg

I can still remember the first time I came up with the idea we should cook an entire stuffed turkey (as I learned about Thanksgiving from a book). I told my Granny we should cook turkey the way the Brits do, and we did! It was grand!


to marinate the turkey leg (24 hours):

honey (1 tablespoon), mustard (2 tbls), vinegar (2 tbls), salt (1/2 teaspoon), dried mint (1 teaspoon), dried rosemary (1 teaspoon), yogurt (150 g), milk (150 ml), garlic (4 large cloves)

for the final stew:

2 parsley roots, 5 small carrots, 1 red bell pepper diced, ½ onion (chopped), 7 green onions (no leaves) chopped in 4, parsley and dill finely chopped, 2 large turkey legs

Yield:  6 servings.

Time: 24 hrs to marinate, 2.5 hrs to prepare.

I marinate the turkey leg just like I marinated the veal and lamb. I made a sauce of all the ingredients and mixed very well. I soaked the turkey leg and kept it refrigerated for 24 hours in a covered plastic box.

I soak my clay pot in cold water for 15  minutes and then set the oven on low heat. I put all the contents of the plastic box in the clay pot. I let it cook for 1 hour.

I cube the vegetables and add them to the clay pot.

I cook it for 1 hour at low heat (I like to overcook meat, you can cook it for only 30 min).
