Baked mushrooms

Mushrooms are healthy, rich and tasty. I believe that mushrooms, peas and beans can easily replace meat and, in my opinion, even taste better. Here is a traditional Romanian recipe for baked mushrooms. Note that I bought huge mushrooms at Kaufland and that made my life so much easier. Try to find big mushrooms when you want to prepare baked mushrooms, because it takes less time to clean and peel them.

Ingredients: 8 huge mushrooms, oil (2 tbls), butter (50 g), salt, pepper, parsley

Yield: 3 servings.

Time: approx. 1 hour.

Preparation:

I wash and clean the mushrooms, I remove the stems and I drain them with kitchen paper towels.

I turn the mushrooms upside down and let them bake in the oven (moderate heat) for 20 min.

The juice comes out of the mushrooms. I remove the juice, turn them on the other side.

I chop the stems and parsley. I mix them with pepper and salt.

I stuff each mushroom with the stems.

I add a bit of butter on top of each mushroom and I let them bake for another 30 min.

They are done when they become soft. I place them on a platter and I drizzle the pan drippings.
