Whole baked chicken with vegetable garnish

We had guests a few nights ago, so I decided to cook something really appealing for 3 young adolescents :). My daughter warned me about the fact that one of the young ladies liked chicken legs and the other one liked chicken breast more. So, I went for a whole chicken on a nice vegetable bed. Here is the recipe!

Ingredients: 1 good looking whole chicken, 5 potatoes, 3 onions, bacon (200 g), basil (2 teaspoons), zest of 1 lemon, olive oil (5 tablespoons), salt, water (3 cups)

Yield:  8 servings.

Time: 2 hrs.

Preparation:

I preheat the oven (moderate). I defreeze the chicken in the microwave (I used a frozen chicken that night). It took 1 hour to defreeze, unfortunately, but it is always worth the wait. I washed it very carefully and then soaked it in lemon juice. I rubbed it with basil (1 teaspoon). I poured the olive oil and water (1 cup) in the heat resistant pot. I baked the chicken for 30 min.

Meanwhile, I washed and peeled the potatoes and onions.

I cut the potatoes in cubes and the onions in quarters.

After 30 minutes I put the vegetables in the pot, around the chicken. I baked it in the oven for another 15 min. I peeled the garlic and cut the bacon in large cubes. I added them to the pot.

I took the chicken out of the oven, I turned it on the other side carefully. I added another cup of water. I stirred the vegetables carefully.

I baked it for another 1 hour adding water from time to time. I turned it on the other side once again, 15 minutes before it was done. This is the beautiful chicken!
