Seafood and avocado rice (Octavian Logigan guest post)

This is my first guest post! And it comes from my dear friend, best friend – Octavian Logigan. He cooked and now is ready to share his recipe with us. Enjoy!

Ingredients: garlic, coriander, tomato sauce, 1 lemon, 50ml olive oil, pepper, 200g rice, 400g seafood (mussels, lobster, baby octopuses) 1 ripe avocado, butter.

First I press the garlic and mix it with the finely chopped coriander (dried coriander works as well). I squeeze the lemon, and mix the juice with the olive oil, the tomato sauce and the pepper.

I peel and chop the avocado, avoiding the nut so that the pulp should not become sour.

I rinse the rice twice in cold water so that it loses its floury surface until it does not stick so much. You can also preboil it if you have a lazy oven like mine.

In a heat resistant ceramic tray I butter the inside, and then add in layers the garlic and coriander, the rice, the seafood, the avocado cubes and top it with the lemon, tomato and oil sauce. I add 2 cups of tap water and put it in the oven for 45 minutes, during which time I also stir and turn it once in a while.

After 45 minutes I add on top 2-3 slices of butter and put it back in the oven for some 15 minutes more.

The ingredients and quantities above serve 4.
