Stuffed mushrooms

Nice dinner for your loved ones <3.

Ingredients: 15 medium size fresh mushrooms, 1/2 onion, 1 pickled cucumber, 15 small cubes of hard yellow cheese, 1 handful of parsley, spread cheese (50 g), butter (50 g), olive oil (2 tbls), water (5 tbls)

Yield: 3 servings.

Time: approx. 40 min.

Preparation:

I preheat the oven (moderate heat). I wash the onion and clean the mushrooms, take out the stalks.

I line the pan with aluminum foil.

I chop the onion, cucumber and stalks.

I saute the onion and stalks in butter (5 min). I salt the mix.

I add the cucumber  and cook 5 min. I add the parsley (5 more min). I stir from time to time.

I pour the olive oil and the water into the pan, and then put the mushroom roofs in it.

I bake until tender and they leave juice (15 – 30 minutes, depending on the type of mushrooms).

I remove the roofs from the oven and place them on a clean serving dish. I stuff them with the sauteed filling (onion, stalks, cucumber, parsley).

I add a pinch of spread cheese and the cheese cubes.

I microwave oven them until cheese is melted. I decorate with parsley. I drizzle some lemon juice.
