Vegetable stew (fennel)

There are so many ways to cook vegetables. One of my favorite dishes is vegetable stew. This time I used fennel, a vegetable that is not popular in Romania and I can find it only in Kaufland supermarkets.

Ingredients: 2 fennel bulbs, 1 red pepper, 1 yellow bell pepper, 6 cloves of garlic, 15 olives, mushrooms (200 g), 2 tomatoes, finely sliced carrots (100 g), olive oil (2 tbls), dried basil, red pepper paste, tomato paste, juice of half a lemon, fresh parsley and dill (1 bundle)

Yield: 6 servings.

Time: approx. 1 hour.


I chop all vegetables is fairly large pieces: fennel, peppers, garlic, tomatoes.

I saute fennel and peppers separately in olive oil, in non stick skillet (5 min). I place them in a large heat resistant glass pot gradually.

I saute mushrooms, add olives, dried basil and lemon juice.

I add tomatoes and cook 5 min.

I add the finely sliced carrots, garlic, tomato and pepper paste to the mix. I bake 30 min (moderate heat).

I use the food processor to chop the parsley and dill.

I add parsley and dill.

This is a lovely dish with an exotic taste (due to the fennel). Enjoy!
