Mixed Salarico and vegetables salad

Salarico (it sounds funny, yes!) is a kind of lettuce from Spain. I like the name big time, so I dedicated a post to this wonderful vegetable :).


Ingredients: lettuce (Salarico, 1 head), 3 medium size tomatoes, 1 large bell pepper, 15 olives, half an onion, parsley and dill (1 bundle of each), olive oil (2 tbls), salt, the juice of half a lemon

Yield: 3 servings.

Time: 15 min.


I took photos after adding each ingredient.

I shred the lettuce and chop the tomatoes.


I add the bell pepper.

I add the olives.

A useful piece of advice: if you buy olives, store them in a jar with olive oil in the fridge. They have an awesome taste afterwards.

I chop the onion and add it to the salad.

I chop the dill and parsley.


I pour the olive oil, salt and lemon juice. I combine them all together.

The entire family is now happy! (this is a personal favorite of my daughter’s).
