Cream of vegetable soup

A few weeks ago I had the opportunity to have some very nice cream of vegetable soup at the Italian restaurant in Feeria (Baneasa mall). It was balanced and tasty. I wanted to try and make something similar myself, especially that I had many carrots and potatoes.

Ingredients: 2 large carrots, 4 potatoes, 1 large onion, butter (1 tbls), dried basil, salt, juice of 1/2 lemon, 150 g  yoghurt (or sour cream), 2 garlic cloves

Yield: 4 servings.

Time: 20 – 30 min.

Preparation:

Saute the garlic and onion in butter, add some salt and basil (1 min). Boil the carrots and potatoes together until fork tender.

Mix potatoes and carrot in electric mixer with onion, garlic and yoghurt. Sprinkle lemon juice.

Mix until creamy. Decorate with parsley.

In the future, I will try this recipe with fennel, mushrooms and other vegetables. The cream is reach in vitamins and tastes heavenly!
