I decided to cook salmon again. I have beautiful memories about cooking this wonderful fish. Scenes full of love and warmth. An encore of those scenes is always welcome :).

Ingredients: 3 large pieces of salmon file, 1 large onion, olive oil, water, salt, lemon, dried basil

As you know by now, my daughter simply loves vegetables. Cooking for her is a challenge and a delight at the same time. There is no better reward in this world than her saying: “E buuuuuuun!/It’s goooooood”! Mothers around the world, you know what I mean <3.

Yesterday we bought some smoked chicken breast (she loves it) so I decided to tempt her with a nicely arranged breakfast. This is what I made:

Festive tower salad – dress to impress

by viviana on February 28, 2012 in Festive,Salads

This recipe is for all of us trying not only to cook, but to impress with our cooking. Appetizers rule when it comes to colorful arrangements, as we can use vegetables, cheese, meat and all sorts of decorations. Most probably, unless we use all kinds of props, we cannot make our potato stew look gorgeous! It can taste like heaven, but always look like… let’s say plain.

I love when people look at what I cook and say: it looks wonderful, I hope it tastes the same. Usually, they are not disappointed :). So, I decided to tell and show you how to turn a simple vegetable selection into a wonderful arrangement. Dress to impress is the name of the game today! My daughter does not like salad dressings very much, so I did not use anything. Of course you can use a little bit of vinegar, olive oil, lemon, salt, etc.

Ingredients: half a red bell pepper, half a long cucumber, 24 cherry tomatoes, 10 olives, 2 slices of ham, 2 toothpicks, 4 pieces of cheese

I had to make something really nice for my daughter and a friend this morning. The 2 little girls love vegetables, so I thought I could trick them into something more than just some green stuff ;). So:

Fruit salad with whipped cream and chocolate

by viviana on February 27, 2012 in Desserts

As you know by now, I keep pushing simple recipes (here is an example) and, as much as I can, I try to promote a healthy diet. Sometimes I fail in that department, as a little bit of crust, fat or something far too sweet are things I also like to share with you!

Today’s recipe is all healthy, classy and tasty. It’s an exquisite simple dessert. Fruits go well with dark chocolate and there is nothing sexier than a little bit of whipped cream on top. Enjoy this and try it at home over the weekend, dear busy working people!

Just beautiful! Another guest post from my friend, Octavian who is really doing his best in teaching us how to prepare fast and delicious meals.

Ingredients: rye bread, butter, ground pepper, cheese, eggs, lemon, salt, stuffed green olives, pesto

I was telling you a while ago how easy it is to cook chicken. Today I cooked chicken breast and I combined this very healthy meat with some even healthier vegetables: tomatoes and garlic. Here is the simplest, quickest and elegant recipe for chicken :).

Dorada and yellow cheese (microwaved)

by viviana on February 21, 2012 in Mains

Hehe! By now you all know that dorada is my favorite fish. I simply love the taste, smell, texture and looks (!) of this fish. I just can’t get enough of it! I was really busy today, so I decided to speed up the process of cooking the fish. Oh, or was it because I was cooking chicken in the oven for my daughter at the same time? A little bit of both, as my Granny taught me something very important: never cook other food when fish is around :).

Ingredients: 2 dorada fish, 6 pieces of yellow cheese (cubes), olive oil, water, basil, salt, lemon

Baked apples

by viviana on February 18, 2012 in Desserts

There is really no other quicker to make, more pleasant and with a better smell dessert in the world! I can prepare 3 apples in 5 minutes (and I am sure you can beat that!) and I only need to bake them in the oven for 45 minutes. Baked apples are perfect in winter because they give you a cozy and warm feeling. There is no place like home!

Ingredients: 3 large, beautiful, sweet apples, butter (50 g), sweet jam (3 teaspoons), 3 nuts (halves), sugar (50 g), raisins (3 tablespoons), vanilla extract (1/2 vial), whipped cream (for serving)

Pasta with vegetables

by viviana on February 17, 2012 in Mains,Ovo Lacto

This is one of my daughter’s favorite dishes. She is 11 and a little bit picky when it comes to homemade food. So I am very happy to share a highly appreciated recipe, even by the most demanding client (considering that when she is not a customer she is my help in the kitchen, I give her all the credit :).

Ingredients: pasta (gnocchi, pipe rigate, or similar, 2 cups), 1 yellow bell pepper, 2 tomatoes, 2 onions, 3 cloves of garlic, juice of half a lemon, water, olive oil, dried basil
